Potable water
Water that is safe for drinking, cooking, and other human consumption, free from harmful levels of contaminants.
Potable water is water considered safe for human consumption, including drinking, cooking, bathing, and washing food contact surfaces. It has been treated, tested, or otherwise verified to meet the quality standards that apply in its jurisdiction. In a plumbing context, the potable system is the network of pipes, fixtures, and equipment intended to carry only this safe water, from the utility connection through every tap that a person might drink from.
The entire discipline of cross-connection control exists to keep the potable system potable. Water that leaves the main as safe drinking water can be degraded inside a building by contact with process fluids, stagnant branches, or non-potable sources such as irrigation water and boiler water. Because the distribution system is interconnected, protecting potability is a shared obligation: one property allowing contamination into its service line can affect the quality of water delivered to others.
Testers and property owners should treat the boundary between potable and non-potable systems as the central question of any survey. Every place the two meet is a cross-connection requiring elimination or protection. Labeling of non-potable lines, color coding where used, and clear records of which fixtures serve which system all make that boundary easier to defend, and they help future testers and contractors avoid accidentally bridging the two systems during repairs or renovations.
